🇮🇷 TAS KEBAB: Skin and slice eggplant in half. Sauté onion in seed oil. Cook lamb with onion to reduce gaminess. Add turmeric and cinnamon and water. Fry eggplant on both sides. Combine meat, eggplant, tomato and add pomegranate paste. Cook until ready.
🇮🇷 SHEFTE ANAR (Pomegranate Meatballs): Mix grated onion with minced lamb meat. Add turmeric, cinnamon, pepper and chili powder. Add chickpea flour and then add an egg. By hand, roll out balls using the entire mixture. Sauté in seed oil. Mix sauté onion, meatballs and pomegranate paste.
